I don’t know many people who don’t enjoy a warm piece of banana bread for breakfast or a snack with some hot coffee or tea!
You have to try this banana bread recipe, made gluten free, but you could also use all-purpose flour if you wish.
This recipe literally takes about 10 minutes to prep and it bakes for 50 minutes — so easy and worth it!
Flax Eggs (2 tablespoons of ground flaxseed & 5 tablespoons of water)
2 Large Ripe Bananas, mashed (should have some brown spots)
1/3 cup of melted vegan butter or coconut oil
2/3 cup of sugar of your choice (cane, brown, coconut, maple syrup)
1/4 cup plant based milk
2 cups of Gluten Free All-Purpose Flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon*
3/4 cup of walnuts, chopped and/or chocolate chips*
Sprinkle of pumpkin seeds*
Preheat oven to 350 degrees F. Lightly grease a loaf pan.
In a small bowl, prepare your flax eggs and let it sit to thicken.
In a large bowl, mash the bananas, add the melted vegan butter or oil.
Mix in the sugar, milk, and flax eggs.
Add your flour to the bowl, then add baking soda, salt, and cinnamon. Stir well but don’t over mix.
Add in your nuts and/or chocolate chips, stir gently, then pour into your loaf pan. Sprinkle pumpkin seeds on top!
Bake for 50-55 minutes in the center rack of your oven.
Let it cool at least 10 minutes before slicing (We know it’s hard to resist).
