Jerk Chickpea Stuffed Sweet Potato

We are back again with another Jerk Chickpea recipe! This meal is a delicious way to get healthy fiber, protein, and delicious flavor! For a family of 2, this recipe will give you all enough for seconds. To fill you up even more, have some greens on the side! Enjoy!




Ingredients

4 Sweet Potatoes

2 cans of Organic Chickpeas, drained & rinsed

2 Tablespoons of Walkerswood Jerk Seasoning/Marinade

Grape Seed or Avocado Oil

1/2 Red Onion, diced

1 Tomato, diced

2 Avocados, diced

1/4 cup of Green Onions, sliced

1 Lime, sliced in wedges


Instructions

  1. Preheat your oven to 400 degrees. Line a baking sheet with foil or parchment paper.

  2. Wash your sweet potatoes. Rub them down with a little bit of oil and salt.

  3. Place your potatoes on the baking sheet and bake for 1 hour and 15 min. Flip them halfway through.

  4. While potatoes are baking, drain and rinse chickpeas and place them into a bowl. Add 1 tablespoon of oil and your jerk seasoning. Stir until all chickpeas are evenly coated.

  5. Dice and slice your veggies! Keep tomatoes, avocado, green onions and lime on a plate together for toppings.

  6. Once your red onion is diced, sauté onions and chickpeas in a skillet with a tablespoon of oil until chickpeas begin to brown, about 7 minutes.

  7. Once your potatoes are baked, remove from the oven and let them sit for about 10 min.

  8. Slice the potato open, mash the insides a little bit and spoon chickpeas on top.

  9. Add tomatoes, avocado, and green onion on top, squeeze a little bit of lime.

  10. Enjoy this meal with a fresh salad on the side and roti bread!
