Socca Flatbread

Gluten free, topped with Parmesan, garlicky spinach, mushrooms & red onion + spicy Daring Chicken 🔥 All these items were just sauteed in a little bit of oil, salt, pepper and minced garlic. This is perfect as a lunch or light dinner!

Craving carbs but want to cut down on bloat? This flatbread is traditionally made in France with Chickpea flour making it naturally gluten free! You can add whatever herbs you want to the batter, even cheese or shredded veggies!!


1 cup chickpea flour

1 cup warm water

1 1/2 tablespoons extra-virgin olive oil + more for the pan

1/2 teaspoon salt

1 teaspoon rosemary & garlic blend (optional)


1. Whisk together flour and seasonings. Then add water and olive oil.

2. Let the batter rest while you preheat oven to 450 degrees F.

3. Put a cast iron skillet in oven while it’s preheating (regular skillets work too, just make sure it’s oven safe).

4. Once pan is hot, carefully take it out of the oven and coat pan with olive oil to prevent sticking. Pour batter in and bake for 15 minutes!

5. Top the flatbread with whatever you like or what I listed above! Enjoy!

Note: must cook the flatbread first before adding toppings. Put it under the broiler for 3 minutes to melt cheese and add crisp.
