Vegan Scrambled “Eggs”

I used to love eggs so much before going vegan, I would eat them in so many different ways. Sometimes vegan egg replacements can get pricey, here’s a more affordable version!


1/2 cup of garbanzo flour

1/2 cup of veggie broth

Pinch of Salt + Pepper


Handful of Spinach

1/4 cup of Onion

Pinch of Vegan Cheese


  1. Combine flour & seasoning in a small bowl.

  2. Whisk in veggie broth.

  3. Heat a pan on medium, add butter or oil. Sauté veggies first (optional).

  4. Add egg mixture to the pan & scramble. Finish with cheese.

  5. Enjoy with avocado toast or any other breakfast food!
