
World's Easiest Kale Greens
Sometimes, all you need is greens, quick and easy. Serve as a side or eat them alone.

Ingredients
1 bag of organic kale or 3 bunches
2 green bell peppers, diced
2 red bell peppers, diced
1 medium yellow onion, diced
3 garlic cloves, minced (3 teaspoons)
1 cup of organic vegetable broth
Seasonings
1 tablespoon of thyme
2 teaspoons himalayan salt
2 teaspoons of pepper
1 tablespoon of Herb de Provence
Instructions
1. In a medium pot, add onions & bell peppers, saute for 5 minutes. Add garlic and cook 1 extra minute.
2. Add kale and seasonings, stir and cook for 2 minutes. Add vegetable broth and cook on low heat for 20 minutes.
